After decades of friendship and a successful corporate journey in luxury and finance, Saurabh and Shikhar joined hands in 2019 to build Panache Retail. Together, they have grown to operate over 33 La Pino’s Pizza franchises and several CaratLane outlets. But their newest venture, Sambar Ritual, is deeply personal and marks their first step into the food space with their own brand.

Saurabh’s South Indian heritage, combined with their shared vision to reimagine South Indian cuisine, inspired the creation of Sambar Ritual. While people in India, especially in North Indian cities, appreciate South Indian food, it’s often seen as limited to dosa and idli. Saurabh and Shikhar wanted to change that narrative by celebrating the rich diversity of the cuisine in a modern, upscale, and traditional setting. They saw a gap in the market for authentic South Indian fine dining and set out to offer an experience that goes beyond the plate.
